Jacques Pépin

Jacques Pepin is one of America's best-known cookbook authors and cooking teachers, and has appeared regularly on PBS-TV for more than a decade, hosting or co-hosting with Julia Child or his daughter, Claudine, more than 300 cooking shows. A former New York Times columnist, he is a contributing editor to Food & Wine magazine and has published nineteen cookbooks. He serves as Dean of Special Programs at The French Culinary Institute in New York City and teaches at Boston University. Born in Bourg-en-Bresse, France, he was the personal chef to three French heads of state before moving to the United States in 1959. He now lives in Connecticut.

Judy Ridgway

Judy Ridgway is an acclaimed food writer and international expert on olive oil. She was the first non-Italian judge to sit on the judging panel of the prestigious Leone d'Oro international awards for olive oil. She travels frequently to the producing regions meeting the growers and tasting the oils along the way. She is also in regular contact with specialist cooking schools, university agricultural departments and research institutes. Previous books featuring olive oil include two editions of Judy Ridgway's Best Olive Oil Buys Round the World and The Olive Oil Companion. She also has extensive experience of national TV and radio.

Lucy Madison is a New York City-based journalist and editor, and a senior editor at Food & Wine magazine. She has worked for publications including W, Interview, Teen Vogue, Lucky, BonAppetit.com, Refinery29, The Awl.com, and more.

Mads Refslund

Mads Refslund was born in Denmark, attended culinary school, and co-founded NOMA with Rene Redzepi. NOMA has repeatedly been named the greatest restaurant in the world. Mads left to run his own Michelin-starred restaurant in Denmark, then moved to New York City where he created the menu at ACME NYC. The New York Times awarded it 2 stars for successfully integrating Nordic philosophy with North American seasonal ingredients.
