Tiffin

Sonal Ved
Authors:
Sonal Ved

There are more varieties of cooking in India than in the rest of the entire world, yet American cookbooks tend to focus only on what's familiar here. Tiffin encompasses recipes from across the continent, where flavors vary from coconut and tamarind to curry and masala and everything in between. In the West, the cuisine is influenced by Portuguese flavors and the sea, with rich crab curries. In the North, meat dishes, such as tandori chicken and mutton stew, warm the body on a cold Himalayan night. Delhi is known for street delicacies such as flat breads and kababs. And throughout the country are Persian, Thai, and British influences as well.A tiffin is a traditional Indian lunch pail that holds homemade curries, vegetables, rice, and spicy meats. Our expansive cookbook open it up to show the diverse flavors from all of the regions of India, from spicy fish curries to rich dumplings to spring rolls to butter chicken. The 500 recipes are organized by region and then into subcategories of meats, seafood, vegetarian, and desserts. With vibrant illustrations that represent the regional style and mouth-watering photography of the dishes, Indian cooking has never been more accessible or well-respresented.

Les Marchés Francais

Brian DeFehr
Authors:
Brian DeFehr

This luscious cookbook was inspired by the unparalleled experience of shopping the open-air markets of Paris. Author Brian DeFehr was raised on the prairies of Canada and struck out to greener pastures in Winnipeg, Chicago, Montreal, and finally landed in Paris, where he developed an appreciation for the French way of shopping the markets, being in tune with the seasons, and allowing the flavors of an exceptionally delicious country to influence what's for dinner. The star of any French book, though, is always France itself: from the bright and clear ocean flavors of the coastal Mediterranean and the Germanic influences in Alsace and Lorraine to the rich comfort foods and cheeses from the mountainous regions near the Alps, the familiar foie gras and cassoulet of Bordeaux, and the piquant Basque flavors closer to Spain in the South, stirred together in the cosmopolitan melting pot of the City of Light---all of this and more, in 75 glorious dishes. They all happen to be gluten-free, inspired by seasonal market produce, and you'd never guess how healthy they are.Photographer Pauline Boldt has shot every dish in the book, along with atmospheric market shots, ingredient, and process shots. The recipes are inherently simple, focusing on good-quality produce, meats, and clear flavors, and the French mystique is ever present. Its aim is to take the reader on a tour of the best markets Paris has to offer, seasoned with culinary traditions from across France, without ever leaving your kitchen or armchair.

Scraps, Wilt & Weeds

Mads Refslund, Tama Matsuoka Wong
Authors:
Mads Refslund, Tama Matsuoka Wong

SCRAPS, WILT & WEEDS features 100 recipes by Mads Refslund, one of the initial partners at Noma, the world-renowned Danish restaurant, using local ingredients in a sustainable, no-waste fashion. Using scraps from vegetables, fruits and animal proteins--food that would normally go to waste--Refslund creates beautiful and accessible recipes for the home cook without sacrificing anything to flavor. He uses 100% of the ingredient or as close as possible, like potato peels, cauliflower stems, or fish skins, but also ingredients that are passed over as too young, like green strawberries, or too old, like stale bread, wrinkly potatoes or bolted herbs. Refslund shares easy-to-follow recipes like: Carrot Tops Pesto, Roasted Cauliflower Stalks with Mushrooms and Brie, Pork Ribs Glazed with Overripe Pear Sauce, Crispy Salmon Skin Puffs with Horseradish-Buttermilk Dip, and Beer and Bread porridge with Salted Caramel Ice Cream. In addition to delicious ingredient-focused recipes, the book contains informational sidebars and stories, insight into the parts of food we often waste, and a section on how to use leftovers, plus 100 beautiful photographs that express Refslund' passion and respect for ingredients, nature and the land.

There is a dish in every chapter for cooks of every level of skill and interest. With tradition as the starting point, the recipes grow in complexity from simple things to make on a weeknight to more elaborate dishes served at Vivian's restaurants. In the summer, when her walk-in is flooded with blueberries, she makes Blueberry BBQ Chicken, Crispy Corn Cakes with Blueberry Corn Salsa, and Buttermilk Blueberry Sherbet. In the winter, when crates of turnips overrun the restaurant, she makes Seared Sea Scallops, Turnip and Butternut Agrodolce, Cider Braised Pork Shank with Roast Turnip Gremolata, and Potlikker Soup and Sweet Potato Cream.
